Entrées
Lime and Garlic Prawns
This one can be used for both an Entrée or finger food to keep your mates happy when they call in for a few beers!
Serves: 4
Ingredients:
- 1kg med to large green prawns
- 3 tbsp olive oil
- 1/2 red onion [finely chopped]
- 1 lime [juice]
- 1 tsp salt
- 1 tsp pepper
- Coriander [to garnish]
Method:
1) Remove prawn heads, shell and de-vain [save the heads - see below].
2) Heat oil in a wok on medium heat.
3) Add prawns + all ingredients.
4) Cook for 6-8 mins until prawns are cooked through.
5) Serve in bowls or on wooden skewers.
Crispy Chilli Prawn Heads
You can actually make use of prawn heads and turn them into a tasty crispy treat ! Here's how:

Ingredients:
- Prawn heads [from med to large green prawns]
- 2 fresh red chillies
- 2 cups bread crumbs
- 2 eggs
- 2 cloves of garlic
- 1 tblsp butter
- Sun flour oil [enough to shallow fry]
- 1 fresh lemon
- Salt & pepper to season
Method:
1) Chop heads into halves [length ways]
2) Finely chop chillies and press garlic.
3) Melt butter in microwave.
4) Combine all ingredients together in bowl with prawn heads.
5) Season with salt & pepper.

Main dishes
Chicken and Linguine Pasta
This is a great pasta dish that the family will love. It is nice an simple and uses some great flavours.
Serves: 8
Ingredients:
- 1 Kg Chicken Breast - cut into portion size
- Pancetta - 8 strips
- 2 tblsp olive oil
- 1 pack fresh Linguine pasta
- 1 punnet cherry tomatoes [cut into halves]
- 2 tblsp pitted olives
- 2 cups fresh parsley [roughly chopped] [keep some to garnish]
- 1 cup white wine
- UTH cooking cream
- Parmesan cheese [shaved]
Note: Chorizo sausage can be used instead of pancetta, just cook in with the chicken.
Method:
1) Loosely wrap each portion of chicken breast with 1 piece of pancetta.
2) Drizzle 2 tblsp of olive oil into a large baking pan.
3) Add tomatoes, pitted olives, parsley to the pan then place chicken on top.
4) Bake in a moderate oven until chicken is just cooked [about 30 mins] then place onto a warm platter to keep warm.
5) Continue to cook tomatoes, parsley and olives in the same pan on the stove top; reducing slightly.
6) Add white wine and cooking cream to mixture and reduce until you are happy with the consistency of the sauce. Season to taste.
7) Stir in parmesan cheese.
8) Add already cooked pasta and stir to combine.
9) Serve with prepared chicken and sprinkle remaining chopped parsley to garnish.
